Fideo and Carne con chile verde plate




Ingredients:

For green chili:
3 pounds pork loin or pork shoulder , trimmed of fat and cut into 1’’ pieces
salt and freshly ground black pepper
2 Tablespoons oil (vegetable or canola oil)
1 large yellow onion , chopped
3 cloves garlic , minced
1/2 Tablespoon ground cumin
1/2 Tablespoon dried oregano leaves
2 cups low-sodium chicken broth
4 fresh poblano chiles , seeded and sliced in half
2 fresh jalapeño peppers , seeded and sliced in half (*see note)
1.5 pounds fresh tomatillos , husks removed
1/2 cup fresh cilantro , coarsely chopped
For fideo :
4 Tablespoons olive oil, divided
1 large onion, sliced (I prefer the purple spanish ones).
1-2 cups extra fine egg noodles
1 teaspoon garlic, fine minced or mashed
½ teaspoon cumin
½ teaspoon celery seed
½ teaspoon black pepper
1 Bay Leaf
8 cups boiling water
2 Tablespoons beef flavored Better Than Boullion soup base
1 sm can plain tomato sauce
1tsp fresh cilantro
